The basic ratio for a classic vinaigrette is three parts oil to one part acid -- and the rest is up to you. Add a little chopped shallot, Dijon mustard or thyme. Whirl Monday's leftover vinaigrette with sundried tomatoes, olives or even a little dry grated cheese such as Pecorino Romano to take Tuesday's salad into delicious new territory.
