Avocado Feta Salsa
Instructions
Yields: 8 to 10 servings
Ingredients:
2 tsp. minced garlic
1 tbsp. fresh parsley, chopped
3 tbsp. red wine vinegar
2 tbsp. olive oil
tsp. oregano
tsp. salt
4 plum tomatoes, chopped
cup red onion, finely chopped
1 (4oz.) pkg. feta cheese, crumbled
2 avocados, chopped
Chips for serving
Preparation Directions:
~ In a small bowl whisk together garlic, parsley, vinegar, olive oil, oregano and salt until well blended.
~ In a large bowl, combine tomatoes, onion, feta and avocado. Pour vinegar mixture over vegetables and toss gently to coat.
~ Serve with Chips
