Cauliflower Gratin
Instructions
Preheat oven to 400 degrees. Bring a medium saucepan of salted water to a boil. Add cauliflower and blanch until tender, about 7 minutes. Drain well and place in an 8x8 baking dish.
In a small saucepan, melt butter over medium heat. Sprinkle over in flour and cook 2 minutes. Slowly whisk in milk. Add nutmeg, and season with salt and pepper to taste. Bring to a boil and cook until sauce starts to thicken, about 5 minutes. Pour over cauliflower and sprinkle top with cheese. Bake 15 minutes, until gratin is bubbly and cheese has melted. Let cool 5 minutes before servingand serve.
