Cheesy Scalloped Corn
Instructions
I have been making this for over 25 years, one of my favorites.
Ingredients:
1 can (15oz) whole kernel corn (drained but save 1/4 cup liquid
I can (15oz) cream style corn
2 tablespoons dried onion flakes
1/2 stick butter melted (2 ounces or 4 tablespoons)
3 eggs beaten
2/3 cup cream (or light cream or tinned/canned/evaporated milk)
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons dried onion flakes
2 cups shredded mild cheddar cheese or colby cheese... (you can use only 1 cup if you like)
about 1 1/2 cups of saltine crackers crushed slightly
Bake 350 for about 55 minutes.
I make this around holidays and special occasions or when I am baking something.
