Chorizo Pasta Recipe
Instructions
1. Cook penne in a large saucepan of salted boiling water according to packet instructions or until al dente.
2. Meanwhile, heat a little oil in a non-stick frying pan over medium heat. Add the chorizo and onion and cook for 3-4 minutes or until the chorizo is golden. Add the tomato passata, thyme, sugar and balsamic vinegar and cook, stirring occasionally, for another 10 minutes.
3. Drain the pasta, return to the pan and cover to keep warm.
4. Add the chickpeas and spinach to the chorizo mixture and cook for 4 minutes or until the spinach has wilted.
5. Season with salt and pepper to taste.
6. To serve, divide the penne evenly among serving plates and top with the chorizo and chickpea sauce.
