Dijon Crusted Pork Roast
Instructions
Preheat the oven to 350F.
Mix the bread crumbs, mustard, garlic, salt and pepper to form a paste.
Put the paste all over the fat side of the roast. Place in a uncovered roasting pan paste side up and roast until the internal temperature of the roast reaches 160F.
Remove the roast from the oven and cover loosely with aluminum foil. Allow it to rest for 10 minutes before carving, at which time it will reach 170F, the best temperature to eat pork.
Serve with garlic mashed potatoes, and broccoli with cheese sauce.
