Gingerbread Cookies
Instructions
The gingerbread cookies are then decorated with coloured icing and traditionally hung at the Christmas tree.
Sift the flour and the sugar (1) in a large bowl or in the mixer bowl, add the spices and the baking soda (2) and lastly the diced cold butter (3);
add also the honey (4) and switch to medium speed, until you have a crumby mixture. At last add the egg and knead for some more seconds until you obtain a ball (5).
Wrap the gingerbread dough in cling film and place it in the fridge for at least 1 hour.
After the given time, roll the dough out with a rolling pin to about 1/6 inch thick (6);
cut it into shapes using cookie cutters in the form of Christmas subjects or small men (7), lay them on a baking pan lined with parchment paper and bake them in a preheated 350F (180C) oven for about 10-12 minutes, until golden brown (8).
In the meanwhile prepare the icing by beating the egg white until stiff and folding the powdered sugar little by little, always beating (9);
divide the icing into as many bowls as the colours you wish to use and add to each one a food dye colour (10-11-12),
put it into a pastry bag with a small, smooth nozzle and decorate (13-14) at will your gingerbread cookies, getting the idea from the picture (15).
