Great Twice Baked Potatoes
Instructions
Preheat oven to 425 degrees. While oven is heating, wash potatoes thoroughly and dry with a paper towel. Wrap each potato with aluminum foil. When the oven is preheated, place the potatoes about an inch apart on the oven rack. Bake for about 45 minutes.
While the potatoes are baking, heat a skillet on medium-high. Place the bacon side by side on the skillet. Make sure not to overlap the pieces. Let bacon brown evenly on each side. Once bacon is cooked, let it cool before chopping. Chop bacon in inch pieces. Set aside.
Finely chop 4 of the scallions and set aside. Take the remaining scallions and chop them in a 1- inch size diagonally, to use as a garnish.
Slice each baked potato in half (longitudinally). Use a small spoon to hollow each potato half, leaving a thin layer of potato meat around the edges. Put potato meat in a mixing bowl.
Warm milk in the microwave for twenty seconds. Mix milk, cream cheese, cheddar cheese, butter, salt, and pepper into potato meat. Once the texture is thick, fold the scallions and bacon pieces into the mix.
Place the halved potato skins on aluminum foil on top of a baking sheet. Spoon the potato mix into the halved potato skins. Drizzle cheddar cheese on top of the potatoes once loaded.
Place loaded potatoes on the baking sheet back in the oven to BROIL for 3-4 minutes.
