Grilled Soy Basil Chicken

Instructions

Get a bowl that the chicken comfortably fits in, allowing room to toss it without spilling over the sides. A gentle sloping bowl is best as this will allow full contact between the chicken and the marinade. (If you use a pot, there will be room for the marinade to hide at the bottom edges and it will require more marinade than necessary.)
Trim away excess skin and fat from the chicken pieces that might cause flare up on the grill. Otherwise, leave the skin in place.
Place chicken in the bowl and liberally apply soy. Apply enough to coat every piece on the surface, and allow some to find its way to the bottom of the bowl. This will be picked up as you toss the chicken.
Crush, mince or use a press to create fine particles of garlic and distribute over the surface of the chicken sitting in the bowl.
Sprinkle on basil to provide a good dirty coating over the top layer of chicken sitting in the bowl.
Toss the chicken until the garlic, basil and soy is well distributed over every surface of the chicken, and pieces on top are exchanged for their turn sitting on the bottom. Let the meat sit for a few minutes in between tossing. Repeat the tossing and mixing action several times until the marinade has been in contact with the chicken for about 20 minutes.
Cooking
Over a low to medium heat, cook the chicken to promote a golden brown exterior. Rotate and move the pieces to minimize flare up and reduce the potential for burning. In between moving the chicken on the grill, keep the top closed, as this will promote a juicy and tender outcome. Use the amount of smoke coming from the grill as your indicator of when flare ups are occurring that might unnecessarily char your chicken.
Also, use a top rack or an indirect grilling method to help keep the heat moderated to provide good cooking without drying out the meat or creating flaming young.
When the meat looks just too mouth watering to keep it on the grill any longer, thats probably about the time to take it off and enjoy it with your favorite vegetable like grilled corn or grilled potatoes. And, dont forget your favorite beer or wine as well.
