How To Chop An Eggplant
Instructions
Start with half a cleaned and peeled eggplant and place it flesh-side down on your cutting board.
Make three length-wise cuts on the eggplant (one down the middle and one on each side).
Holding the base, chop the eggplant width-wise.
Because the eggplant is larger at the bottom, some of the pieces will turn out bigger than others. You can simply chop these pieces in halves or thirds depending on what size you want the pieces to be.
Place onto your plate or bowl to save for whatever recipe needs chopped eggplant.1
