I've had several requests to share a carrot cake recipe and I am very pleased to finally have this filmed for you. I have been making this cake for a looong time - way back before fat & calories were in the news quite so much (so it's not the healthiest!) However, it is a delectable cake so a once in a while indulgence can't be denied...enjoy! Carrot Cake
4 eggs
1 cup honey
1/2 cup lightly packed brown sugar
1 cup oil
2-1/4 cups flour
2 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp nutmeg
3 cups grated raw carrots
1 cup raisins
1 cup chopped walnuts - optional
9"x13" greased cake pan, 325 degrees Fahrenheit
