How To Make Fried Rice With Peas And Currants

1. Heat butter in a large skillet over low to medium heat. Add spices and nuts and allow them produce a fragrance, the nuts changing to a golden color (if not already toasted). Add scallions and saut until bright green. Add currants and peas and saut a minute or two more. Slowly add rice, breaking it up so it gets evenly coated. When all the rice has been added, flatten out in pan. When the bottom has browned slightly, turn rice and repeat. Serve once rice is evenly heated.
