How To Make Honey Glazed Carrots With Raisins

Instructions

Boil pot of water (half-full on high flame)
Dump carrots in boiling water and let cook for 5-6 minutes, or until they're tender.
Turn the flame off and drain the carrots into a colander. Be sure to wear oven mits as your pot handles may be very hot.
Place the carrots back in the pot, followed by the raisins, lemon juice, butter and honey.
Turn flame back on low and stir with spoon. Let cook for 5 minutes.
After 5 minutes, the liquid will have reduced. Turn off the flame and the remaining liquid will thicken as it cools. This will be your honey glaze.
Add pinch of salt and pepper (to taste) and stir with spoon.
Wearing oven mits, transfer carrots into a bowl.
Add parsley and stir with spoon. Your honey-glazed carrots are ready to serve.
