How To Saute Eggplant
Instructions
Warm a skillet on the stove over medium heat.
Add 1 to 1 1/2 tbsp of olive oil to the heated pan, making sure the bottom of the pan is completely coated.
Place the chopped eggplant in the pan. It will sizzle, but that's a good thing.
Toss and flip the eggplant so that all the pieces are coated with the olive oil.
You can add more olive oil if needed. Just drizzle over the top and continue to flip with the spatula.
Allow the eggplant to cook (approximately 2-3 minutes on each side depending on the thickness).
As the eggplant cooks, it will become slightly translucent and yellow. When it's done, it will have a silky texture and will be pliable and soft.
Once it has cooked, remove from skillet onto a plate and serve.
