How To Tort, Level And Fill A Cake

TORTING
Place one hand on top of the layer so that you can rotate the Decorating Turntable. Hold the serrated knife in the other hand with the middle of the blade positioned midway up the side of the layer. While slowly turning the layer, move the knife back and forth to cut the layer in two.
To separate layers, carefully slide the top torted layer onto a Cake Circle. Repeat the process for each additional layer.
FILLING
Now you are going to pipe a thick line of frosting about 1/2 inch inside the bottom cake layer. You will do this with either your decorating bag or a ziploc bag. If you need help preparing your decorator bag, please review my article about, "Preparing a Decorating Bag". If you need to use a ziploc bag, simply cut off one of the corners so that a thick line of frosting can be squeezed out.

At this point, you can fill your cake with a variety of filling.
Replacing the top layer, on a cake lifter, being gentle.
You will need to replace your top layer now. While the thick frosting has created a pretty good barrier, you will still need to be gentle replacing the top layer and when frosting. A little refrigeration may help to set things up.
