In The Kitchen With Ken: Catfish Nuggets
Instructions
In a large bowl, combine all ingredients, making sure catfish is well coated.
In separate bowl, combine egg whites, buttermilk, and beer.
In a dish, mix together flour, seasoning and crushed red pepper.
Dredge catfish in egg mixture, then in seasoned flour.
Heat vegetable oil to 375 degrees. Drop in catfish nuggets one at a time, and cook until browned and crisp. Sprinkle with chives after removing the nuggets from the oil. Serve hot.
