Lamb Tiella

Instructions

Wash the lamb and at the pieces dry. Wash, peel, and slice the potatoes into pieces about the same size as the pieces of lamb.

Heat the olive oil in an oven-proof pan with the garlic, and when the garlic has browned add the meat. Cook over a brisk flame, turning the pieces to brown them on all sides.

While you are doing this, preheat your oven to 360 F (180 C).

Season the meat to taste with salt and pepper, add the potatoes, and dust with some of the minced parsley.

Transfer the lamb to the oven and roast it for about a half hour, adding a few tablespoons of hot water if it looks to be drying out.

After a half hour, dust the lamb tiella with the cheese and the remaining parsley. Bake a few minutes more and serve at once.
