Mango Chutney

Instructions

Peel the mangos and dice into small pieces. Add the raisins. Add the peeled and diced ginger. Add the vinegar.
In a sauce pan, cook the ingredients until the mangos cook to a soft texture for about 10-12 minutes. Add the cashews and Leave on low heat for few more minutes. Towards the end of the cooking time, add Cayenne pepper if you like.
Serve the Mango Chutney with grilled chicken, meat or fish - The chutney adds a distinctive delicious taste any meat it is served with.
