Microwave Country Breakfast

Instructions

1. In a microwavesafe bowl mix potato, bell peppers, chives, butter and pepper.
2. Cover it and microwave for 2-3 minutes on Hi.
3. Ensure the potatoes are soft. Remove and stir.
4. Place tomato slice below the potatoes.
5. In another bowl, whisk eggs and milk and pour into the potato mixture.
6. Microwave it on Hi for 2-3 minutes till the eggs are cooked. R
7. Remove and put it in serving plate.
8. Sprinkle some chives and parsley sprig and serve.
