Minestrone

Instructions

1 In a large pot, saut onions in olive oil. Add parsley. Add the vegetables, one at a time (according to the required cooking time of each), adding a little broth or water. When all the vegetables have been added, pour some more broth to cover the veggies. Bring to a boil then simmer.

2. Mince together bacon fat, garlic, and basil. Stir into the cooked minestrone. Season with salt and pepper to taste.

3. Remove from heat and serve with Parmesan cheese.
