Mint Ice Cream Cookie
Instructions
1. Heat milk to a slow boil then reduce heat and add mint, cool for 40 minutes
2. Strain mint from milk
3. Combine strained milk, sugar, cream and vanilla into bowl and mix until sugar is dissolved
4. Cool until very cold for 2-3 hours
5. Pour into mixer, mix 10 minutes
6. Add green food coloring
7. Wait 3 minutes
8. Add peppermint bits
Cookies:
5. Cream butter with brown sugar
6. Add eggs
7. Add oats
8. Add flour baking soda and salt
9. On parchment paper flatten to tennis size balls
10. Bake at 350 degrees for 17 minutes
11. Spread ice cream between cookies and refrigerate 2 hours
12. Wrap in tin foil and store in freezer before serving.
