Mixed Bean And Mushroom Ragout
Instructions
Yields: 4 servings
Ingredients:
1 (10oz.) bag frozen baby lima beans
1 cup fresh green beans, cut into 1-inch pieces
2 cups sliced mushrooms
1 tbsp. olive oil
1 tbsp. cold water
2 tsp. cornstarch
1 (14.5oz.) can Italian style stewed tomatoes, undrained
1 ( 14.5oz.) can garbanzo beans, rinsed and drained
Preparation Directions:
~ Cook lima beans and green beans in lightly salted water according to instructions on lima bean pkg. Drain and set aside.
~ In a large skillet cook mushrooms in hot oil for 5 minutes, stirring occasionally. Combine water and cornstarch; stir into mushrooms. Stir in tomatoes and garbanzo beans. Cook and stir until thick and bubbly.
~ Stir in cooked beans and heat thoroughly.
