One 'boeuf Bourguignon'

Instructions

1. Brown the bacon strips in olive oil and set them aside.
2. In the same pan add beef sirloin and some oil. then add peppercorn and salt and Sear the beef for 5 minutes, Remove it and set aside.
3. In a same pan add carot, celery, onion and garlic. Saute it for 5 minutes.
4. Now add beef, dust some flour. Add dry red wine, parsley, thyme, beef broth.
5. Stir and bring it to boil and simmer it for 2 hours covered with a lid.
6. Saute pearl onions, bacon and mushroom on high heat for 3 minutes. Set aside when done.
7. Remove beef and discard the vegetables from the pan and add beef, bacon, mushroom and onions and some tomato paste.
8. Boil and reduce the liquid. Serve it garnished with freshly chopped parsley.
