Pan Seared Scallops With Lemon, Thyme & Vine Ripe Tomatoe...

Instructions

1. Pat the scallops very dry with a cloth, then season very well with salt and pepper and place them in a hot skillet with olive oil.
2. Sear until golden brown on both sides.
3. Once they are cooked set them a side and in the same pan add in garlic and shallots and caramelize.
4. Once cooked add in tomatoes, thyme, zest and juice.
5. Let cook for 2 minutes and season with salt and pepper.
6. Pour tomato mixture over seared scallops. Serve hot and enjoy!
