Pasta Quills With Four Cheeses

This four cheese sauce with pasta quills makes a very tasty and substantial first course, which you can personalize with your favourite types of cheese. The pasta quills with four cheeses is a substantial and very tasty first course, ideal for all the dairy product lovers; be careful not to exaggerate, since it's quite a caloric dish.
The four-cheese sauce is made by melting different crumbled or grated cheeses with milk on a low heat, and blending it with the pasta quills boiled al dente.
Put a pot with plenty of salted water on the cook and bring it to a boil. Prepare the cheeses you will need for the sauce (1); pour the milk and the heavy cream into a saucepan on a low heat, and add the grated Parmesan cheese (2); dice the blue cheese and the Taleggio cheese (3) and add them in the saucepan (4) together with the milk, the heavy cream and the Parmesan cheese.
Stir with a wooden spoon (5) until the cheeses are completely melted (be careful to put a flame-spreader under the pot), then add salt and pepper.
As soon as the water comes to a boil, add the pasta quills and boil them al dente, then drain and saut them for a few minutes in the saucepan together with the four-cheese sauce (6).
Put your pasta quills with four cheeses on a serving dish and serve immediately.
