Pavlova

Instructions

1) Pour 8 egg whites in a mixing bowl. Beat with an electric mixer.
2) Slowly pour 2 cups of Castor sugar into the bowl.
3) Add 1 tsp of vanilla essence, a pinch of cream of tartar or 2 tsp of corn flour and mix until it becomes stiff.
4) Transfer the mixture to a baking sheet laid with baking paper or wax paper.
5) Preheat oven to 180 deg F but lower the temp to 150 deg F before you pop the Pavlova in.
6) Bake the Pavlova for 1 hr.
7) To make the cream, add 300 ml of thickened cream and 1/4 cup Castor sugar in the mixing bowl and whip it with the mixer.
8) Top the pavlova with the cream and then decorate with the fruits.
