Phuket Hokkien Mee
Instructions
Place noodles in a bowl and cover with boiling water.
Leave to stand for 20 minutes, stirring occasionally, or until tender then drain and reserve.
Blanch broccoli in lightly salted boiling water for 2 minutes.
Drain, refresh under cold running water and reserve.
Heat a large wok, add peanut oil and heat until just smoking.
Add pork and stir fry for 5 minutes or until browned then remove and reserve.
Mix soy sauce, lemon juice, sugar, chili sauce and sesame oil and reserve.
Add ginger to wok and stir fry for 30 seconds.
Add garlic and chili, stir fry for 30 seconds.
Add the reserved broccoli and stir fry for 3 minutes.
Stir in snow peas, pork, reserved noodles with beaten eggs and water chestnuts.
Stir fry for 5 minutes or until heated through.
Pour over reserved chili sauce, toss well.
Scoop into a warmed serving dish, garnish.
