Rattatouille
Instructions
I The aubergines: slice them, chop the onions, cut in little cubes the peppers and courgettes. Reserve each vegetable in separate bowl.
II 1. Boil the big volume of water and put inside them for 30 seconds. Peel the skin and cut in 4, take out the pips.
2. In the pan or pot put few tablespoons of oil with aubergines. Cook 5 minutes.
3. Add the peppers and onions. Cook 5 minutes.
4. Add courgettes, tomatoes and garlic. Mix, cover and cook 20minutes slowly.
5. Add fresh basil and parsely.
