Spaghetti Frittata With Toasty Walnuts And Cheese
Instructions
1. Heat oven to 350 F.
2. Cook spaghetti according to package directions.
3. Drain well; transfer to a medium bowl and toss with 1 teaspoon of the olive oil.
4. Refrigerate 5 minutes.
5. In a large bowl, combine whole eggs, egg whites, salt and pepper, beating with a fork.
6. Meanwhile, heat remaining 1 teaspoon oil in a large nonstick oven-proof skillet.
7. Add garlic; saute over medium-high heat 1 minute.
8. Add spinach; cook, turning with tongs 1 minute or until spinach is wilted.
9. Remove pan from heat; let stand 2 minutes.
10. Add spaghetti to egg mixture; mix well.
11. Add spinach mixture to the bowl; mix well.
12. Return mixture to same skillet; top with flax meal, nuts and cheese.
13. Bake 20 minutes or until eggs are set and cheese is melted.
14. Cut into wedges; serve with pasta sauce and garnish with basil.
