Spumoni Cookies
Instructions
1) Melt unsweetened chocolate with the double boiler.
2) Cream 2 cup butter, 1 egg, 1 tsp vanilla and 1/2 cup sugar.
3) Chop 1/4 cup walnuts.
4) Add 2 1/4 cups of all purpose flour and a pinch of salt.
5) Break dough into three parts and add cherry candies to one, nuts to the other third, and chocolate to the other third. Layer the doughs starting with the nut dough, next is the chocolate dough, then top with the cherry dough.
6) Place in a loaf pan and refrigerate for 6 hours to 6 weeks before baking.
7) Cut the cookies into small parts and bake in 375 deg F for 10 mins.
