Stuffed Baked Potatoes
Instructions
Pricked potatoes with fork, then cover it with foil, wrap all around. Bake them in an oven just around 30 minutes in 180 degrees. Heat the pan, and pour a little oil and butter, while waiting for the oil to get hot, chop the onions, then saute the onions. Cut the tomatoes, and take out the eye of tomato, then add it on the pan, saute them together. Stir about 3 minutes, then add a tsp of coriander powder, half tsp of roasted cumin powder, salt to taste, freshly crushed black pepper, half a tsp is fine, and juice of a lime. Stir the mixture properly. Now we add a little fresh chopped mint,, fresh cream then remove the pan. Take out the baked potato, slice then scoop the potatoes then put it to the pan and mix it with the filling together. The mixture is ready, and the empty potatoes and put the mixture then lastly, garnish with mint leaves.
