Sweet Potato Dessert

Instructions

Wrap sweet potato in wet paper towel and then wrap tightly with plastic. Heat for 5 minutes in microwave. Turn over and heat again for another 5 minutes. Cut in half and scoop out the inside of the sweet potato. Transfer to a heavy sauce pan. Add sugar and mash. Add butter, dairy cream, egg yolk, rum, and vanilla. Mix well. Heat until sweet potato doesn't stick to the bottom of pan. Scoop back to the skin of sweet potato.

Separate an egg yolk from its egg white in a small bowl. Add a little water to the egg yolk and mix it well. Coat the top of the sweet potatoes with this egg yolk paint. Sprinkle sesame seeds on top of the sweet potatoes. Bake the potatoes at 400 deg F for 10 minutes.


Note: Reduce the microwave time to 3 minutes on each side of the potatoes for a full sized American microwave. The microwave we use (500 watt) also works as a conventional oven. Cook sweet potatoes in a microwave for the first time. Then bake them at 400 degrees Fahrenheit (200 degrees Celsius) in a conventional oven.
