Sweet Roasted Pears With Pomegranate Syrup Drizzle
Instructions
1. Heat oven to 400 F. Cut pears in half lengthwise. U
2. se a melon baller or measuring teaspoon to scoop out core and seeds.
3. Place pears, cut sides down in a shallow baking dish.
4. Pour apple juice over pears. Bake uncovered 15 minutes.
5. Combine granola and 1 tablespoon of the honey.
6. Turn pears over and spoon granola mixture into hollows of pears.
7. Return to oven and bake until pears are tender, about 6 minutes.
8. Use a large spoon to transfer pear halves to serving plates and let stand 5 minutes. (Juices from dish should have evaporated.)
9. Combine pomegranate glaze and remaining 1 tablespoon honey.
10. Mound 2 tablespoons soy ice cream over each pear half and drizzle pomegranate-honey mixture attractively over plates.
11. Garnish with chocolate covered ginger if desired.
