Tofu Fajitas

Instructions

Slice tofu into cubes and place in a shallow dish. Sprinkle fajita seasoning over the tofu.


Whisk together soy sauce, lime juice, and garlic. Pour evenly over tofu, stirring to coat each piece. Marinate for at least an hour, up to overnight, stirring occasionally to ensure the tofu is evenly coated in marinade.


Heat about 2 tablespoons of olive oil in a large sautee pan over medium heat. Add onions, and sautee for approximately 5 minutes, or until translucent. Add the peppers, and sautee for another two minutes.


Add the tofu mixture to the pan. Using your spatula, crumble the tofu as you stir. Sautee the tofu, pepper, and onion mixture for about 10 minutes, or until the onions and peppers are very soft.



Serve by filling soft tortillas with the tofu mixture, and top with salsa, guacamole, cheddar cheese, sour cream, and any other favorite fajita toppings.
