Zuchinni Latkas
Instructions
Peel and grate onion and potato into a bowl lined with a dish towel. Gather the towel and squeeze out as much liquid as possible. Return the shreds to the bowl. Repeat process with zucchini, squeezing to remove excess liquid. Add zucchini to potatos. Add garlic, egg, salt, pepper and flour. Mix to combine.
Heat oil in a large skillet, drop mixture by spoonful into the oil and flatten with the back of the spoon. Fry on each side until golden. Drain on paper towels. Enjoy!
