Alligator Tail Tacos

Instructions

Place alligator meat in a sealable container and coat it with olive oil and next five ingredients. Marinate overnight.

Place peppers, onions and marinated alligator on the grill and cook. Once everything is grilled, remove pepper skins and seeds. Cut up the peppers, onions and alligator to be placed on tacos. Heat the flour tortillas until soft. Build your tacos with peppers, onions, alligator meat and slaw. Serve hot.

Spicy Slaw:

Finely slice cabbage, red onion, carrot, cucumber and bell pepper. Add seasonings, Miracle Whip, vinegar, mustard, honey and lime juice. Mix until everything is well coated. Serve on top of the tacos.

Soak your beans overnight in water and rinse until clean. Grill onion, bell peppers, tomato and corn. Chop each well and add to black beans with seasonings. Cook over stove top until beans are soft. Top with feta cheese and serve hot.
