Bacon Bomb Recipe
Instructions
1. Slice the sausage almost all the way through lengthwise. Break the cheese up into strips and stuff into the cut. It should look like this picture. If you've ever made pigs-in-a-blanket, you might be familar with this technique.
2. Except whereas pigs-in-a-blanket are wrapped in a pastry dough, this bad boy is going to be covered in mashed potatoes. First you need to mix the mashed potatoes and flour together to form a semi-wet dough. It should be sticky enough to cling to the sausage, but not so sticky you can't work with it.
3. You will cover the sausage with the mashed potatoes. If you've ever made corn dogs, you will be familar with this technique. Just pat it all on and get it nice and smooth.
4. The bacon needs to be woven into a mat large enough to wrap around your mashed potato-sausage-cheese contraption. See the Bacon Explosion post for a more detailed set of instructions and pictures if you need help figuring out the weaving and wrapping process.
5. Cook in a 375-degree oven until the bacon is as browned as you like it. This will vary widely by preference. Just keep an eye on it and take it out when it looks done to you. I bake mine on a rack over a tray to catch the drippings. Bacon fat must be saved for later cooking uses.
PLATING:
Slice the Bacon Bomb into strips. Serve sandwiched between two slices of cornbread. Yum.
