Black Beans

Instructions

First of all you have to take a pan and pour water in it and then add beans. Cover the pan and leave it to boil. When water start boiling leave the beans to boil for two minutes.
Now remove it from the flame and just remain cover and keep it a side for 1 hour.
Take another pan and little olive oil in it so that you saut different ingredients in it like green bell pepper, chopped onion and garlic. You have to saut these things for 4-5 minutes or you can say when you will see the chopped onion is tender.
Now you have to add bay leaves and beans in it mix it well.
Season the mixture with pepper and salt.
Add bacon and ham bone or hock in it and mix it again.
Leave this mixture on flame so that it can be boiled and then reduce the flame cover the pan and leave it to cook and simmer for two hours.
You can also add some more water in it if during the cooking you seem that water is going to be enough dry.
When beans are fully cooked add vinegar in it.
Garnish the dish with hard cooked eggs.
Dish out and serve it with boiled rice.
