Cajun Smoked Turkey And Pork Roast
Instructions
1) Make a marinade: warm chicken broth, add 1 tbsp garlic powder, 1 tbsp cayenne pepper, 1 tsp salt, 1/2 stick butter, 1 tbsp Louisiana hot sauce, and 1 tbsp lemon juice. Mix well.
2) Inject the marinade into several parts of the turkey.
3) Inject the marinade into the pork roast.
4) Rub turkey and pork with cajun rub.
5) Position the turkey breast side down when roasting for the first 45 minutes.
6) Roast a slab of bacon along with the pork and turkey.
7) Flip the turkey breast side up and insert slabs of smoked bacon into the cavity. Tie the turkey's legs.
8) Position some unpeeled onions beside the charcoals.
9) After an hour, mop roasts with the marinade and flip around for even cooking.
10) Put a few slices of the smoked bacon on the roasts.
11) After another hour, mop again with the marinade.
12) After again another hour, take out the roasts and let them rest for about 20 minutes before carving.
