Once your first patty is formed, sprinkle bacon and cheddar cheese in the center of the patty. Then form another patty the same size and place on top, sealing the bacon and cheddar in the center of the burger. Place on the grill until cooked to desired temperature.
Once you have cooked the four burgers on the grill, bring them inside to place on a griddle and melt the cheddar cheese. Turn your griddle on high heat, put the burger on the griddle and cover it generously until the cheese surrounds the outside of the burger. Place a few pieces of crushed ice on the griddle to begin steaming the cheese and cover with a large lid. Once the cheese begins to melt around the outside of the burger, use a spatula to begin releasing it from the griddle. This should form about and inch or larger ring of cheese around the burger. serve on a toasted bun while still bubbling.

Cook on grill until desired temperature. Cover with 2 slice of pepper jack cheese and a dollop of sour cream to cool the heat of the peppers. Serve hot on a toasted sesame seed bun.
