Chicken And Cheese Quesadilla W/ Fresh Pear Slices

Thaw chicken if not already thawed. Clean, then season with garlic salt, seasoning salt, and black pepper (at your discretion, everyone is different in their preference for seasoning.) Chop chicken breasts into small to medium sized pieces. Place 1/4 cup of canola oil to the bottom of skillet (just enough to coat). Lightly brown chicken in skillet.

Once browned remove from skillet and place on a plate. Get a new medium sized skillet or wash the one used for browning the chicken. Place one tortilla on UNGREASED pan. Then top with a handful (less or more your preference) of cheese. After topping with cheese add a few pieces of chicken, this can be as much or as little as you like. Generally depending on the size of the tortilla I put 8-10 pieces. I like to use one tortilla and fold it after placing the cheese and chicken. You can also choose to add another layer of cheese and top with a tortilla.

Once the flat side of the tortilla is slightly brown flip to other side. Leave on for no longer than a minute, then remove. Repeat process (placing tortilla, adding cheese, chicken, etc) until you have made the number of quesadilla that you like. Refrigerate leftovers.

Top with salsa, cheese, and sour cream (optional). Also feel free to enjoy with tortilla chips on the side.
