Classic Fettucini Al Fredo

Instructions

1. Prepare fettuccine according to the manufacturer's instructions. Be sure to salt the water according to your preferences because the only time pasta effectively receives seasoning is during the cooking. Also, be sure to use a pot large enough to hold at least the amount of water recommended on the package. Overcrowding the pot will cause the pasta to clump and cook inconsistently. Drain and cover to keep warm.

2. In a large skillet melt the butter over medium high heat. If you opt to use garlic, add it to the melting butter. Allow the butter to foam and then reduce the heat to low. If using garlic, stir while cooking garlic for 5 minutes.

3. Add cream to the skillet and raise heat to medium-high. Begin stirring when the cream begins to simmer. Continue stirring until the cream begins to thicken.

4. Slowly stir in the grated parmesan cheese. The sauce will continue to thicken as the cheese is incorporated.

5. Add salt, pepper and nutmeg to taste.

6. Serve over pasta.
