Colorful Shrimp Stir Fry & Roasted Sweet Potatoes
Instructions
Prepare Vegetables and Arrange in a Circle on a Platter:
1. Cut both ends from onion, remove skin, and cut in half. Cut into large dice.
2. Smash the garlic to remove skin, Cut off ends and remove germ if necessary.
3. Core and slice the pepper into long, thin strips.
4. Wash the celery, trim the ends, and slice thinly on the bias
5. Cut the broccoli into button-sized florets. Blanch, shock, and drain on paper towels.
6. Peel the carrot and slice thinly with vegetable peeler.
To Serve:
1. Heat oil in a wok or large saut pan over high heat.
2. Introduce the vegetables one at a time, stirring constantly; Onion, Garlic, Red Pepper, and Celery.
3. Add shrimp and sear.
4. Season and add liquids.
5. Add broccoli and carrots and allow liquid to come to a boil.
6. Cover briefly.
7. Adjust seasonings, add sprouts and serve over rice if desired.
