Filet Mignon

Instructions

1. Add a drop of olive oil on the meat and rub it all over with the salt and pepper.
2. Boil carrot and asparagus for around 8 minutes.
3. Grease a skillet and set it over medium/high heat.
4. Sear the top for 4 minutes.
5. Sear the sides briefly and flip to sear the bottom for2 minutes.
6. Add the shallot, garlic and mushroom slices.
7. Cook for 2 minutes and remove the medium prepared beef.
8. Add the wine and bring to a boil.
9. Let the liquid reduce for 2 minutes.
10. Serve with asparagus spears and carrots.
11. Pour hollandaise sauce over the vegetables and beef.
12. Sprinkle with tarragon.
