Hot German Potato Salad

Instructions

1. In a large skillet, cook 8 strips of bacon until crisp.
2. Drain off as much of the bacon grease as possible.
3. Add a medium sliced onion to the skillet and cook over low heat for 2 minutes.
4. Add 1/3 cup vinegar, 2 tablespoons flour, 1 teaspoons salt, cup chopped parsley, cup water, 3 teaspoons sugar, and teaspoon black pepper.
5. Return to stove and cook mixture until just slightly thick.
6. Carefully fold in cooked, sliced potatoes, until the potatoes are well-coated with the thickened mixture.
7. Remove from heat and place in a nice serving bowl. Serve while warm.
