How to Use Eggplant

Eggplant can be prepared three different ways:

Grilled
Sauted
Roasted
Peeling

If you're planning on grilling eggplant or sauting it (basically, if you plan on doing anything other than oven roasting it), then you're going to want to peel it.

The skin is tough, so leaving it on whole is not very desirable.

Salting

You definitely want to salt eggplant before you cook it. Salting prevents the absorption of whatever you're cooking it in (olive oil, etc.).

Salting helps draw out its bitter juices and gives it its really delicious, silky texture and flavor.1

Eating

Eggplant is good to eat as a main dish, or as a supporting ingredient in side dishes. It's also amazing to eat in sandwiches.
