Kale Greens

Instructions

Place half of the greens in a large Dutch oven. Pour a cup of water over them. Do not be tempted to add more water. It will just dilute the flavor of the finished dish.
Cover and simmer the greens until they cook down, about 10 minutes. Then place the smoked meat on top of them and add the remaining kale and the jalapeno pepper. Simmer for half an hour.

Stir in the remaining ingredients. Simmer the kale until it is tender. Taste it every 10 minutes and adjust the seasonings to your taste.
