Makeover Potato Salad
Instructions
Yields: 4 servings. Ingredients: 1/2 lb. red potatoes, cut into chunks, 1/2 lb. sweet potatoes, cut into chunks, 1/4 cup light zesty Italian salad dressing, 1/3 cup light mayonnaise, 1 1/2 tsp. dijon mustard, 1/2 cup celery, chopped, 4 green onions, chopped. Preparation Directions: -Cook potatoes in saucepan of boiling water 15 minutes or until just tender; drain. Rinse potatoes with cold water until cooled; drain again. Set aside. -In a large bowl shisk together salad dressing, mayonnaise, and mustard until smooth. Add potatoes, celery, and green onions, mix gently. -Refrigerate for 30 minutes to blend flavors.
