Marinated Basil Tomato Salad
Instructions
1. Slice tomatoes into -inch slices, and arrange them in the bottom of a large shallow dish.
2. Combine 1/3 cup olive oil, cup white wine vinegar, 2 tablespoons chopped fresh basil, 2 tablespoons finely chopped onion, 1 clove minced garlic, 1 teaspoon salt, and teaspoon freshly ground black pepper in a jar.
3. Cover the jar tightly with a lid, and shake vigorously.
4. Pour mixture over sliced tomatoes.
5. Cover with plastic wrap and refrigerate at least 8 hours. Serve cold as a side dish.
