Mulled Wine
Instructions
To make the mulled wine prepare all the spices you'll need for the recipe (1), so cut thinly the orange and lemon zests, without removing the white pith, which would make the drink bitter (2). Pour the sugar into a steel frying pan, not too deep (3),
add the citrus zests, the spices (4-5) and finally the red full-bodied wine (6).
Put the pan on the stove and bring it slowly to a boil: let it simmer on a low flame for 5 minutes, stirring until all the sugar has dissolved (7); now use a burning long match to ignite the wine, taking care not to get burnt: the alcohol contained in the wine will burst into flames and you have to wait for them to subside (8).
Once the fire has gone out, sift the mulled wine through a very fine strainer and serve it steaming hot. Enjoy your mulled wine!
